An easy staple in our home!

We try to keep a few different frozen proteins in the fridge for easy meals during the week. The large raw shrimp from Sam's Club is our go-to, and it's great to have on hand! This meal is really simple, fills you up in a healthy way, and is so tasty!

Ingredients
Serves 2
1 Cup Rice, Dry
Shrimp
16 Pieces of Shrimp
1/2 Cup Corn Starch
Salt and Pepper
Spicy Mayo Dressing
1/3 Cup Mayo
1-2 Tablespoons Sriracha
1-2 Teaspoons Rice Vinegar
Pinch of Sugar
Shake of Salt
Shake of Pepper
Toppings:
1-2 Cups Cabbage, Pre-Shredded or Thinly Chop
Two Roma Tomatoes or One Large Tomato, Diced
2 Green Onions, Diced
One Avocado, Diced or Sliced
Directions
Cook the rice according to the bag. Once cooked, fluff and set aside until ready to build your shrimp bowl.
While your rice is cooking, mix all dressing ingredients together until well combined.
If you like a little more spice, add additional sriracha sauce. If you added too much spice, offset with just a bit more sugar or add additional mayo. If you like it a little more tangy, add additional rice vinegar. Once mixed and you find the flavor you like, set it in the fridge until ready to top!
While the rice is cooking is also the time to prep your vegetables. Once your vegetables are prepped, move onto your shrimp.
In a pan, heat vegetable oil on medium heat.
Line a plate or bowl with paper towels.
While your oil is heating up, pat dry your shrimp. Season both sides with salt and pepper.
Coat shrimp in cornstarch, shake off and cook in the heated oil on each side for about two minutes.
Remove from the heat and set on the paper towel-lined plate/bowl to rid the shrimp of excess oil.
The last step is to assemble! Start with your rice base. Top with shredded cabbage and diced tomato. Next I like to add my shrimp, and finish with green onion. If we're feeling fancy, we'll also add avocado. Lastly, drizzle with sauce. Drizzle is a relative term. We like a lot of sauce, but add what you'd like!
