Simple and delicious, what more could you ask for?

I love having staple meals. Meals where you have pretty much everything on hand at any given time or that only take 20-30 minutes when you don't have a lot of time during the week.
“Okay, but really this actually tastes like an eggroll!”
Ingredients
Serves 2
1/2 Teaspoon Sesame Oil
1 Tablespoon Oil
1/2 Cup Red Onion, Diced
2 Teaspoon Minced Garlic
1/2 Pound Ground Beef (Turkey or Pork also work)
1/8 Teaspoon Ginger, Powdered
1 Tablespoon Sriracha or Hot Sauce
1 Bag Coleslaw Mix
1 Tablespoon Rice Wine Vinegar
2-3 Tablespoons Soy Sauce
Salt, to taste
Pepper, to taste
Sauce
1/4 Cup Mayonnaise
1-2 Tablespoons Sriracha or Hot Sauce
Splash of Rice Wine Vinegar
Sprinkle of Salt
Directions
Heat the sesame oil and oil in a large skillet over medium/high heat. Add the diced red onion and garlic, sauté (stirring frequently) until the onion softens. Keep an eye on the garlic so it doesn't burn!
Add the ground beef (or other meat) and ginger.
Cook the ground beef until it starts to brown and add the sriracha or hot sauce. Finish cooking the meat until there's no pink.
Add the coleslaw mix, soy sauce, rice wine vinegar, and salt and pepper to taste.
Stir until combined. Cook for about five minutes or until the cabbage is tender.
While the mix is cooking, add the mayonnaise, sriracha, rice wine vinegar and salt into a small bowl.
Whisk them together and add more hot sauce to taste.
Add your egg roll mix to a bowl and top with your sauce. If you have it, we added wonton strips for a little crunch. I would also consider adding green onion!
