Tastes just like the real thing and is perfect for a cool fall or cold winter day!

I don't know about you, but I love cheeseburgers. Sure, they aren't the healthiest, but the grease and cheese just hit the spot. This soup is a fun play on the real deal and tastes like it too! I've made a few versions of this soup, but this one has been my favorite.
Ingredients
Serves 4
1/2 pound ground beef
1/2 cup diced yellow onion
3/4 cup shredded carrot
1/4 teaspoon celery salt
1 teaspoon dried parsley flakes
1 teaspoon garlic powder
4 tablespoons butter, divided
3 cups chicken broth
1 tablespoon yellow mustard
1/4 cup pickle juice
2 tablespoons diced pickles
4 cups peeled potatoes diced (about 2 medium potatoes)
1/4 cups all-purpose flour
8 ounces shredded extra sharp cheddar cheese
4 ounces shredded pepper jack cheese
1 1/2 cups milk (2% is recommended)
1 teaspoon salt
1/4 teaspoon pepper
Directions
In a large saucepan, brown beef over medium-high heat. Drain and set aside.
In the same saucepan over medium heat, melt 1 tablespoon of the butter. Saute onion and carrots until vegetables are tender, about 10 minutes.
Add garlic powder and cook until just fragrant, about 1 minute.
Add chicken broth, mustard, pickle juice, potatoes, celery salt, parsley and beef. Stir and bring to a boil.
Reduce the heat to low and cover, simmering for 10-12 minutes or until potatoes are tender.
When there is about 5 minutes left in the simmering, melt the remaining butter in a small skillet. Add flour, stirring and cooking for about 3 minutes or until bubbly.
Add the butter/flour roux mixture to your soup and bring to a boil, stirring for 2 minutes.
Reduce heat to low. Add pepper jack and cheddar cheeses, milk, pickle, salt and pepper. Continue to cook and stir until cheese melts.
Take off the heat and enjoy!
