A simple Italian meal that makes your home smell amazing and your belly very happy.

I picked up this recipe during my honeymoon in Florence (Firenze), Italy. The way the smell filled the room was amazing. There was no hustle; it was about letting the sauce simmer and build flavor. You'll notice this recipe doesn't have any salt or pepper, or really any additional seasoning. It's just fresh ingredients doing the work. It's one of the many reasons Italian cuisine is one of my favorites. The recipes are simple, but delicious because it's about fresh ingredients shining.

Follow along step-by-step and make this tasty Bolognese for yourself!
Ingredients
1 Tbsp Olive Oil
1 Small White/Yellow Onion, diced 1-2 Carrots, diced 1-2 Celery, diced 3-4 Cups Chicken Broth
1 lb Ground Beef 1 Cup Dry Red Wine 1 Tbsp Tomato Paste Recipe
Dice all of your veggies. In a sauté pan, add your olive oil and a small pinch of the veggies. Turn to medium heat. When the veggies start to sizzle in the oil, the oil is the correct temperature. Add all of your carrot, onion, and celery. Sauté for about 5 minutes or until soft.
Add about a half cup of broth and your ground beef. Cook on medium/high heat until the beef is cooked through and no pink remains.
Turn your heat to high and add your red wine. Red grape juice adds a similar flavor for those that don’t drink or cook with alcohol. Stir occasionally and let the wine cook out for about 8-10 minutes or until you can't smell the alcohol anymore.
Turn down the heat to low. Add tomato paste and about a cup of broth. Mix the tomato paste in well.
Let simmer for as long as you'd like, adding more broth as needed. It should be wet, but not soupy. When ready to eat, cook your pasta as instructed. Mix the pasta into the sauce. Plate and top with parmesan cheese.
