One of my all-time favorite soups!

My grandpa's famous chicken noodle soup, a family staple. I love this soup. It's warm and makes your home smell amazing. My favorite addition is the rice, which you don't see in many other chicken noodle recipes. The only thing I did to change my grandpa's recipe was add a little celery and carrots. This recipe won a Blue Ribbon in the 2023 Iowa State Fair's Winner Winner Chicken Noodle Dinner food category. My first call was to my grandparents and it made the win extra special!
Ingredients
Serves 6
About 2.5 Pounds Chicken Breast, Bone In with Skin
1 Small White or Yellow Onion, Diced
1 Tablespoon Salt
Pepper, To Taste
¼ Teaspoon Ground Thyme
¼ Teaspoon Poultry Seasoning
5 Whole Cloves (Do NOT substitute for ground cloves)
1 Bay Leaf
One Medium or Large Carrot, Diced
Two Celery Sticks, Diced
¼ Cup Rice (Do NOT use Instant Rice)
2 Cups Wide or Extra Wide Egg Noodles
Directions
In a big pot, add your chicken breast and two quarts of water.
If the chicken doesn’t sit below the water, be sure to cut it to make it fit.
Bring the chicken and water to a boil. When it almost reaches a boil, skim the fat from the broth.
Add onion, salt, pepper, thyme, poultry seasoning, cloves and bay leaf, stirring until combined.
Simmer uncovered for about three hours.
Dice vegetables while the broth is simmering.
Remove the chicken, debone and cut the chicken into small pieces. Add chicken back to the broth.
Add carrots, celery, rice and simmer for another 40 minutes.
Add the egg noodles and simmer for a final 20 minutes or until noodles are cooked.
This soup loses its broth pretty quickly because of the long simmer times and the rice and noodles. I like that's it's more substance than broth, but if that's not your thing you can always add some extra water or broth down the road.
Serve it up and enjoy!
Soups are great in the fall and winter and I plan to make this one a lot. The best part is you can make this ahead of time and keep it in the refrigerator after deboning and adding the chicken back.
